Caitlin Nelson, a 20-year-old social work student, collapsed after consuming multiple pancakes rapidly, leading to her death three days later due to irreversible damage from lack of oxygen.

Despite Caitlin’s known food allergies, a coroner determined choking as the cause of death. The Nelson family faced another heartbreaking loss after Caitlin’s father, James, died in the 9/11 attacks while aiding individuals at the World Trade Center.

Described as a compassionate individual, Caitlin balanced her studies with volunteering efforts, including mentoring children affected by the Sandy Hook tragedy. She was praised for her selfless actions, echoing her father’s heroic qualities. Following Caitlin’s passing, a large on-campus vigil honored her memory, symbolizing the impact she had on many lives.

In 2020, Caitlin’s mother dropped a wrongful death lawsuit against the university after reaching a settlement. The family and the university have refrained from commenting further on the matter.
